TVP Bacon

Ingredients:

Wet
2 tablespoon water
4 tablespoons soy sauce
1 teaspoon liquid smoke
2 tablespoons maple syrup 

Dry
1 cup TVP
1 teaspoon smoked paprika
1 teaspoon garlic powder
1 teaspoon onion powder

Directions:

Preheat oven to 225 degrees.

In a saucepan, combine wet ingredients and bring to a boil. Turn off the heat and add the dry ingredients to the wet ingredients in the saucepan and combine. Allow to sit for about 10 minutes until the moisture is absorbed.

Line a sheet pan with parchment and spread the TVP bacon on the pan. Bake in the oven, stirring every few minutes. Watch closely. These will be crisp/dry once complete.

Notes:

Use these as a filling for vegan quiche or frittata or add to scrambled tofu. Store leftovers in the refrigerator or freeze to use later.

TVP Chorizo Crumbles

Ingredients:


Wet
3/4 cup water
1/4 cup soy sauce
1 tablespoon apple cider vinegar 

Dry
1 tablespoon chili powder
1 tablespoon smoked paprika
1/4 teaspoon ground cumin
1/4 teaspoon ground coriander
1 teaspoon oregano
1 teaspoon garlic powder

Directions:

In a skillet, combine wet ingredients and bring to a boil. Turn off the heat and add the dry ingredients to the wet ingredients in the skillet and combine. Allow to sit for about 10 minutes until the moisture is absorbed. Turn on the heat to medium and cook until most of the moisture has evaporated. These will retain some moisture and won’t be crisp/dry.

TVP Italian Sausage Crumbles

Wet
1 cup water
1/4 cup soy sauce
1 tsp liquid smoke 

Dry
1 cup TVP
1/4 cup nutritional yeast
2 teaspoons garlic powder
1 teaspoon onion powder
1 teaspoon ground sage
1 teaspoon dried basil
1 teaspoon dried oregano
1 teaspoon dried thyme
1 teaspoon dried parsley
1 tablespoon fennel seed, crushed
1/2 teaspoon black pepper
1 teaspoon red pepper flakes

Directions:

In a skillet, combine wet ingredients and bring to a boil. Turn off the heat and add the dry ingredients to the wet ingredients in the skillet and combine. Allow to sit for about 10 minutes until the moisture is absorbed. Turn on the heat to medium and cook until most of the moisture has evaporated. These will retain some moisture and won’t be crisp/dry.
